Achar, or pickles, were made from carrots, lemons, cucumbers, tomatoes and garlic. The vegetables were boiled or just placed raw in clay jars in a mixture of vinegar, water and spices. The jars were sealed with clay or mud, and in the winter put into the sunlight for 15 days, and then stored in a warm dry place until consumed.
